“Journées Monégasques” – Café de Paris

- Lukewarm coco bean salad with octopus and prawns, crisp vegetable marinade with virgin oil and balsam vinegar

- Stuffed sardines «Monégasque style» with vegetables from the gardens of Provence

- Pumpkin cream in a capuccino of Parmesan with Alba oil

- «Gallinette» and scorpion fish in stock with a light «aïoli» and conserved vegetables

- «Stockfish» Nissarde-style

- Pan-fried Mediterranean squid served «à la plancha» with risotto and squid ink
